- 《隨園食單》袁枚著,王英志編纂校點。袁枚(1716-1798),字子才,小字瑞官,號簡齋,一號存齋,因居於江寧(今南京)小倉山隨園,世稱隨圍先生,晚年自號倉山居士、隨園老人、倉山叟等。錢塘(今杭州)人。袁枚是清代性靈詩派宣導者,與趙翼、蔣士銓合稱"乾隆三大家"。本書是一部講述當時烹飪技術與南北菜點的著作。全書包含須知單、戒單、海鮮單、江鮮單、特牲單、雜牲單、羽族單、水族有鱗單、水族無鱗單、雜素菜單、小菜單、點心單、飯粥單和茶酒單等十四個種類,述及乾隆年間流行的三百餘種南北菜肴、點心飯粥、美酒名茶。他以隨筆的形式,闡述所收菜品的烹飪原理、菜品的優劣,解讀菜品的製作方式,詮釋了自己的烹飪理論與思想。此書被後世的美食家奉爲經典。
