Today they are world opinion leaders on all matters concerning food, and food means cuisine, tradition, culture, innovation and economy. Big companies, and sometimes official institutions, are starting to see them as spearheads to penetrate new markets not only for the country's gastronomy but for its products as well. 30 Minuts visited the renowned Culinary Institute of America in Napa Valley, California. This institute, always on top of world food trends, is where the most important conference on Spanish culinary arts was held outside Spain. About 60 chefs took part, teaching traditional as well as avantgarde cuisine.
