- Summary:
- This volume contains 64 culinary recipes created or compiled in the late 19th century, possibly in Yorkshire, England. The volume is bound in half leather and has an original marbled pastedown and endleaf. The creator numbered pages for the first portion of the volume (p. 1-54) and the remaining pagination was supplied by the cataloger (p. 55-160). There are blank pages at the end of each section (p. 9-11, 16-17, 20-21, 35, 38-39, 44-45, 49-53) and in the second half of the volume (p. 55-135, 139-158). The volume is written by one primary hand with a second hand appearing sporadically (p. 30, 43, 48, 136, 138, and 159). Neither contributor is identified. The recipes are organized thematically, according to an index (p. i). There are “soups broths” (p.1), “made dishes” (p. 12), sauces (p. 18), “puddings pies etc” (p. 22) “cakes biscuits etc” (p. 32), jellies (p. 36), pickles (p. 40), “wine beer etc” (p. 46), and miscellaneous (p. 54). The volume is written primarily in English, but there are two recipes written entirely in French – “Bouillie Gratinée” (p. 7) and “Coquilles de Ris de Veau” (p. 29). Examples of recipes include: tapioca soup (p. 3), “omelot with kidney beef” (p. 12), Boudin à la Hollondaise (p. 24), Bakewell pudding (p. 24), Cornish fish pie (p. 28), Omnibus pudding (p. 30), scarlet beef (p. 41), and The King Cup (p. 47).
