Summary:

A leather-bound volume comprised of handwritten culinary, medicinal, and household recipes by Emma Higgins Samson. The recipes were written from the years spanning 1821 to 1841 probably in England. Culinary recipes include cakes, catsups, custards, jellies, meat dishes, picklings, puddings, fish dishes, fruit, meat dishes, and wines. Highlights include cucumber, mushroom and walnut catsups; fried oysters and sole; bread and butter pudding; drop cakes, cheesecakes, and ginger cakes; meatballs; flummery; and syllabub. Several recipes for making wine are throughout the volume. Wines include: black currant, cowslip, damson, elder flower, gooseberry madeira, and strawberry. A few beer recipes are in the volume. Medicinal remedies for ailments such as back strain, burns, chilblains, coughs, influenza, jaundice, smallpox, and stomach aches are included.
