Biography/History:
Born in Boston, Massachusetts, Corson attended school in New York. She studied healthful, economical, and practical cookery. Corson opened the New York School of Cooking in 1876, where she was superintendent until 1883. She introduced scientific cooking and domestic economy into the curriculum of schools and colleges. She wrote several books on cooking.
Summary:
A letter from Corson to her friend Ms. Smith dated May 4, 1880. Corson discusses her schedule of lectures and cooking lessons. She also writes of making an arrangement to pick up furniture from Ms. Smith. There is one leaf with three newspaper clippings pasted on regarding Corson's publications and lectures. One announces Corson's New family cook book.
