Summary:
Examines background and regulatory authority of USDA Food Safety and Inspection Service (FSIS), and examines key meat and poultry inspection issues related to microbiological contamination and the Hazard Analysis and Critical Control Point (HACCP) system, including development of HACCP, pathogen performance standards, animal diseases Escherichia coli and Listeria monocytogenes, and risk-based inspection system.
