Featuring contributions from some 120 international food scholars, Albala's (history, U. of the Pacific, Stockton, California) four-volume reference work offers students and general readers a view of the human experience through the lens of food, as a way to better understand and appreciate the differences between people around the world. The nation-states, regional variations, and selected minority cultures are organized geographically into four volumes covering Africa and the Middle East, the Americas, Asia and Oceania, and Europe; entries within each volume are presented in alphabetical order. Each entry includes an overview of the food culture, major foodstuffs, cooking methods, typical meals, eating out practices, food-related traditions for special occasions such as holidays and birthdays, diet and health, a "food culture snapshot" of an individual or family describing typical eating habits, one or two representative recipes, and a list for further reading.
